This dairy free / vegan brown rice risotto is my all time favorite. Ingredients are simple and it’s soo easy to make. Brown rice is an amazing whole grain to add to your diet: it aids in digestion and weight loss, is rich in antioxidants, regulates blood sugar, keeps heart healthy. I love having it as a side to any protein and / or salad. Enjoy!

Ingredients:
1/2 chopped onion
Olive oil
Bone broth OR mushroom / veggie broth

Process:
Fill bottom of pan with olive oil
Place chopped onion pan – let cook for 10 mins
Add brown rice to pan
• stir and cook for 1-2 min
Add broth (ratio rice to broth 1:2.5. Ex: for 2 cups of
rice, 4.5 cups of broth)
Let cook for 45 mins stirring occasionally
Turn off stove, let sit for extra 5 mins for fluffiness
